Nothing "drops off" of a criminal history.

Criminal records are forever.

For car insurance, it typically stays on your driving record (that insurance companies get) for 5 years.

As for disclosing it to employers, it depend on the question. Whatever the question is your answer it truthfully.

How long will a DWI stay on my record in New York?

Do I have to disclose it to employers?
After a certain number of years will it fall off the record and will I be able to deny it existed?
